Ingredients
- 1 dl (⅖ cup) millet
- 3 dl (1¼ cups) water
- A pinch of salt
- 1.5 dl (⅔ cup) cashew nuts
- 0.5 dl (3 tbsp + 1 tsp) honey
- 0.5 dl (3 tbsp + 1 tsp) coconut oil
- 0.5–1 dl (3 tbsp + 1 tsp to ⅖ cup) water, for blending
Instructions
- Rinse the millet under running water until the water runs clear.
- Add the millet, 3 dl (1¼ cups) water, and salt to a saucepan.
- Bring to a boil, then reduce the heat and simmer until the millet is soft and the water has been absorbed, about 15–20 minutes.
- Add the cooked millet, cashew nuts, honey, coconut oil, and 0.5 dl (3 tbsp + 1 tsp) water to a blender.
- Blend until completely smooth and creamy. Add up to another 0.5 dl (3 tbsp + 1 tsp) water if needed.
- Transfer to a container and let the topping cool completely before serving or refrigerating.
Tips & Variations
- Adding more water makes the topping thinner and less sweet.
- Serve over porridge, fruit salad, waffles, pancakes, or desserts.
- Adjust the sweetness by adding more honey; this will also thin the consistency.
- Add vanilla powder for extra flavor.
- The topping thickens in the refrigerator as the coconut oil sets.
