Homemade Cardamom Granola

A warm and aromatic homemade granola with cardamom, oats, and seeds, lightly sweetened with honey and baked until crisp.

Yield: ~20 dl (8 cups) | Prep: 15 min | Bake: 25–30 min | Total: 40–45 min

Ingredients

  • 15 dl (6 cups) rolled oats
  • 100 g (3.5 oz) honey
  • 2 dl (¾ cup) water
  • 60 g (2.1 oz) coconut oil
  • 1.5 tsp cardamom
  • 0.5 tsp salt
  • 1.5 dl (⅔ cup) pumpkin seeds
  • 1.5 dl (⅔ cup) sunflower seeds

Instructions

  1. Preheat the oven to 150°C (300°F) using the convection (fan) setting.
  2. Add the rolled oats, cardamom, and salt to a large mixing bowl and mix well.
  3. In a separate bowl, combine the water and honey and stir until fully dissolved. Set aside.
  4. Melt the coconut oil if it is solid.
  5. Pour the honey mixture into the oats and mix thoroughly.
  6. Add the melted coconut oil and mix again until everything is evenly coated.
  7. Divide the mixture evenly between two large baking trays.
  8. Bake for 20–23 minutes, stirring once after about 15 minutes for even browning.

Seeds

  1. Spread the pumpkin seeds and sunflower seeds on a baking tray.
  2. Place them in the still-warm oven after removing the granola.
  3. Let them bake for about 10 minutes using residual heat.

Final Assembly

  1. Let the granola and seeds cool completely.
  2. Mix the seeds into the granola.
  3. Store in an airtight container.

  • Add dried fruit after baking for extra sweetness.
  • Store in a cool, dry place for extended freshness.
  • Serve with plant milk, yogurt, or fresh fruit.
