A hearty green lentil casserole with fresh stinging nettles, coconut milk, onion, and garlic. A nourishing, creamy vegetable-based meal with a rich flavor.
Ingredients
- 2.5 dl (1 cup) dry green lentils
- 100 g (3.5 oz) fresh stinging nettle leaves
- 5 dl (2 cups) coconut milk
- 3 dl (1¼ cups) water
- 1 large onion
- 2 garlic cloves
- 1 tsp herb salt
- 1 tsp salt
Instructions
- Pick, clean, and weigh the nettle leaves before rinsing them. Weighing the nettles while they are wet will increase their weight and make the measurement inaccurate.
- Soak the lentils in water for about 6 hours.
- Rinse the nettles thoroughly. Remove any roots and coarse stems.
- Chop the nettle leaves and set aside.
- Drain and rinse the soaked lentils with fresh water.
- Place the lentils in a pot and add the water and chopped nettles.
- Chop the onion and press the garlic cloves.
- Add the onion, garlic, herb salt, and salt to the pot.
- Cover with a lid and simmer over medium heat for about 15 minutes, or until the lentils are almost tender. Start timing from the moment the pot is placed on the stove.
- Add the coconut milk and stir thoroughly. Continue simmering for about 10 minutes more, or until the lentils are completely tender. Stir occasionally and check the consistency toward the end of cooking.
- Remove from the heat and serve warm.
Tips & Variations
- Wear gloves when picking and handling fresh nettles to avoid being stung.
- Weigh the nettles before rinsing to ensure the recipe contains the intended amount.
- If the leaves were accidentally weighed after rinsing, they may weigh about 215 g (7.6 oz) once cleaned and ready to chop, depending on how much water remains.
- Serve with boiled potatoes, rice, pasta, or whole-grain bread.
