Creamy Sweet Coconut Sauce

A mild, naturally sweet coconut sauce with a creamy, smooth texture. Simple and comforting, suitable for everyday desserts as well as special treats or breakfast bowls.

Yield: about 6 dl (about 2.5 cups) | Prep: about 10 min | Cooling: optional | Total: about 15 min

Ingredients

  • 3 dl coconut flakes (about 1.25 cups)
  • 1 dl whole-grain oatmeal (about 0.4 cup)
  • 1 dl honey (about 0.4 cup)
  • 4 dl water (about 1.7 cups), divided
  • A pinch of salt

Instructions

  1. Add the oatmeal, 2 dl (about 0.85 cup) of water, and the salt to a pot.
  2. Cook over medium heat, stirring frequently, until a thick porridge forms.
  3. Remove from heat and allow the porridge to cool completely.
  4. Transfer the cooled porridge to a blender.
  5. Add the coconut flakes, honey, and the remaining 2 dl (about 0.85 cup) of water.
  6. Blend for 1–2 minutes, until smooth and creamy.
  7. Serve immediately, or refrigerate for a few hours for a thicker consistency.

Serving Suggestions

Excellent as a topping for sweet pizzas, vegetable-based desserts, pies, pancakes, waffles, cakes, or breakfast bowls.
