Creamy Cashew–Coconut Green Pea Soup

A smooth and creamy green pea soup blended with cashews and coconut flakes for a naturally rich and satisfying flavor.

Ingredients

  • 1 kg (2.2 lb) frozen green peas
  • 1 liter (4.2 cups) water
  • 200 g (7 oz) cashews
  • 1.5 dl (⅔ cup) coconut flakes
  • 4 tsp salt

Instructions

  1. Add the frozen green peas and water to a large pot.
  2. Bring to a boil and cook until the peas are soft and heated through, about 5–7 minutes.
  3. Transfer the peas along with the cooking water to a blender.
  4. Add the cashews, coconut flakes, and salt.
  5. Blend until completely smooth and creamy.
  6. Work in 2–3 batches, depending on blender capacity, to ensure a smooth consistency.
  7. Serve warm and enjoy.
