Wax Bean Patties
Flavorful baked patties made from wax beans, seeds, nuts, and red pepper — tender on the inside and perfect for wraps or sandwiches.

Ingredients
- 500 g (17.6 oz) wax beans
- 0.5 dl (3 tbsp) cashew nuts or sesame seeds
- 1.5 dl (⅔ cup) pumpkin seeds
- 1 red bell pepper
- 2 onions
- 2 garlic cloves
- 2 tsp herb salt
- 1 tbsp fiber husk (powder) or 2 tbsp fiber husk (flakes)
Instructions
- Finely chop the raw wax beans in a food processor until well crushed.
- Chop the onions and red bell pepper by hand or in a food processor.
- Finely grind the nuts and seeds one at a time in a blender or grinder.
- Transfer all the crushed ingredients to a bowl. Press the garlic cloves and add them to the mixture along with the herb salt and fiber husk.
- Preheat the oven to 150°C (300°F) using the convection/hot-air setting.
- Shape the mixture into patties of your preferred size; this recipe yields about 10 patties of 12 cm (5 inches).
- Place the patties on a baking sheet lined with parchment paper.
- Bake for 35 minutes.
- Allow them to cool slightly before serving.
