Sunflower Seed Sausage

A plant-based homemade sausage made with sunflower seeds and aromatic seasonings — perfect on bread, in tacos, or enjoyed on its own.

Ingredients

Base

  • 2 dl (¾ cup) sunflower seeds
  • 4 dl (1¾ cups) water
  • 2 tsp salt
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 1½ tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp bell pepper powder
  • 2 tsp agar agar

Instructions

  1. Blend the sunflower seeds and water until completely smooth.
  2. Pour the mixture into a saucepan and add the salt and seasonings.
  3. Stir well with a whisk until fully combined.
  4. Bring to a boil, then continue whisking as the mixture thickens. (Use a lid to protect yourself from bubbling.)
  5. Pour the mixture into 2.5 dl (1 cup) drinking glasses (or any similar cylindrical containers).
  6. Let it cool and set completely before removing.
  7. Once set, insert a thin knife at the edge to release the sausage.
  8. Slice and enjoy!

Tips & Variations

  • For square shapes, use a square container instead of a glass.
  • To speed up cooling, place the glasses in a bowl of very cold water for 5 minutes. Replace the water with fresh cold water and chill for another 5 minutes. Once the glasses feel cold to the touch, remove the sausage following the instructions above.
