A hearty, plant-based sausage made with soy mince, walnuts, and savory seasonings — perfect for sandwiches, wraps, or as a protein-rich side.
Yield: About 800 ml (4 glasses, 14 slices each) | Prep: 15 min | Cook: 30 min | Cooling: 10+ min | Total: 55+ min
Ingredients
- 2 dl (¾ cup) dry natural soy mince
- 85 g (3 oz) walnuts
- 1 tsp paprika powder
- 1 tbsp salt
- 6 g (2 medium cloves) garlic
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 tsp agar agar
- 3 tbsp nutritional yeast
- 5 dl (2 cups) cold water
- ½ tsp dried basil
- ½ tsp oregano
- ½ tsp thyme
Instructions
- In a saucepan, boil the dry soy mince in water until soft.
- Drain the soy mince thoroughly, then transfer it to a blender.
- Add all remaining ingredients and blend until the mixture is completely smooth.
- Pour the mixture into a saucepan and cook over medium heat, stirring constantly. Bring to a boil and continue stirring until the mixture becomes very thick. (Use a lid to protect yourself from splattering.)
- Pour the mixture into 2.5 dl (1 cup) drinking glasses (or any similar cylindrical containers).
- Let it cool and set completely before removing.
- Once set, insert a thin knife at the edge to release the sausage.
- Slice and enjoy!
Tips & Variations
- For square shapes, use a square container instead of a glass.
- To speed up cooling, place the glasses in a bowl of very cold water for 5 minutes. Replace the water with fresh cold water and chill for another 5 minutes. Once the glasses feel cold to the touch, remove the sausage following the instructions above.
