Soy Sausage

A hearty, plant-based sausage made with soy mince, walnuts, and savory seasonings — perfect for sandwiches, wraps, or as a protein-rich side.

Yield: About 800 ml (4 glasses, 14 slices each) | Prep: 15 min | Cook: 30 min | Cooling: 10+ min | Total: 55+ min

Ingredients

  • 2 dl (¾ cup) dry natural soy mince
  • 85 g (3 oz) walnuts
  • 1 tsp paprika powder
  • 1 tbsp salt
  • 6 g (2 medium cloves) garlic
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 tsp agar agar
  • 3 tbsp nutritional yeast
  • 5 dl (2 cups) cold water
  • ½ tsp dried basil
  • ½ tsp oregano
  • ½ tsp thyme

Instructions

  1. In a saucepan, boil the dry soy mince in water until soft.
  2. Drain the soy mince thoroughly, then transfer it to a blender.
  3. Add all remaining ingredients and blend until the mixture is completely smooth.
  4. Pour the mixture into a saucepan and cook over medium heat, stirring constantly. Bring to a boil and continue stirring until the mixture becomes very thick. (Use a lid to protect yourself from splattering.)
  5. Pour the mixture into 2.5 dl (1 cup) drinking glasses (or any similar cylindrical containers).
  6. Let it cool and set completely before removing.
  7. Once set, insert a thin knife at the edge to release the sausage.
  8. Slice and enjoy!

Tips & Variations

  • For square shapes, use a square container instead of a glass.
  • To speed up cooling, place the glasses in a bowl of very cold water for 5 minutes. Replace the water with fresh cold water and chill for another 5 minutes. Once the glasses feel cold to the touch, remove the sausage following the instructions above.
