Sesame Crackers
Light, crisp, and delicious crackers made from sesame seeds and honey — rich in flavor and free from gluten, yeast, and oil. Perfect as a light dessert, snack, or breakfast treat.

Ingredients
- 250 g (8.8 oz) sesame seeds (with or without shells)
- 75 g (2.6 oz) honey
- 1.5 tsp powdered psyllium husk or 1 tbsp psyllium flakes
- pinch of salt
Instructions
- Preheat the oven to 150°C (300°F), fan-forced.
- Line a baking tray with parchment paper and prepare a second sheet to place on top later.
- In a saucepan, combine the sesame seeds, honey, and salt. Mix well.
- Heat the mixture over medium heat, stirring continuously until the honey melts and evenly coats the seeds.
- Add the psyllium husk and stir again to combine.
- Remove the saucepan from the heat once everything is well mixed — the goal is simply to melt the honey and blend the ingredients evenly.
- Spread the warm mixture evenly over the prepared baking tray.
- Place the second sheet of parchment paper on top and gently press or roll the mixture out as thinly as possible using your hands or a rolling pin (be careful — it may still be warm).
- Dip a table knife in a glass of water, then use it to cut the mixture into squares.
- Bake for about 10 minutes, or until golden.
- Allow the crackers to cool completely, then break them into squares.
