Pumpkin Seed Sausage

A plant-based homemade sausage with pumpkin seeds and savory seasonings — perfect on bread, tacos, or simply enjoyed on its own.

Yield: 500 ml (2 glasses, 14 slices each) | Prep: 5 min | Cook: 5 min | Cooling: 10+ min | Total: 20+ min

Ingredients

  • 2 dl (¾ cup) pumpkin seeds
  • 4 dl (1¾ cups) water
  • 2 tsp salt
  • 4 g (1 medium clove) garlic
  • 1 tsp onion powder
  • 2 tsp agar agar

Instructions

  1. Add all ingredients to a blender and process until completely smooth.
  2. Pour the mixture into a saucepan.
  3. Bring to a boil, stirring continuously with a whisk or spoon. Continue cooking until the mixture becomes very thick. (Use a lid to protect yourself from bubbling.)
  4. Pour the mixture into 2.5 dl (1 cup) drinking glasses (or any similar cylindrical containers).
  5. Let it cool and set completely before removing.
  6. Once set, insert a thin knife at the edge to release the sausage.
  7. Slice and enjoy!

Tips & Variations

  • For square shapes, use a square container instead of a glass.
  • To speed up cooling, place the glasses in a bowl of very cold water for 5 minutes. Replace the water with fresh cold water and chill for another 5 minutes. Once the glasses feel cold to the touch, remove the sausage following the instructions above.
