Pumpkin Seed Sausage
A plant-based homemade sausage with pumpkin seeds and savory seasonings — perfect on bread, tacos, or simply enjoyed on its own.
Yield: 500 ml (2 glasses, 14 slices each) | Prep: 5 min | Cook: 5 min | Cooling: 10+ min | Total: 20+ min
Ingredients
- 2 dl (¾ cup) pumpkin seeds
- 4 dl (1¾ cups) water
- 2 tsp salt
- 4 g (1 medium clove) garlic
- 1 tsp onion powder
- 2 tsp agar agar
Instructions
- Add all ingredients to a blender and process until completely smooth.
- Pour the mixture into a saucepan.
- Bring to a boil, stirring continuously with a whisk or spoon. Continue cooking until the mixture becomes very thick. (Use a lid to protect yourself from bubbling.)
- Pour the mixture into 2.5 dl (1 cup) drinking glasses (or any similar cylindrical containers).
- Let it cool and set completely before removing.
- Once set, insert a thin knife at the edge to release the sausage.
- Slice and enjoy!
Tips & Variations
- For square shapes, use a square container instead of a glass.
- To speed up cooling, place the glasses in a bowl of very cold water for 5 minutes. Replace the water with fresh cold water and chill for another 5 minutes. Once the glasses feel cold to the touch, remove the sausage following the instructions above.
