Creamy Banana Millet Pudding
A creamy banana pudding made with cooked millet, ripe bananas, and cashews for a naturally sweet, dairy-free treat.

Ingredients
- 1 dl (½ cup) millet
- 3 very ripe bananas
- A pinch of salt
- 5 dl (2 cups) water
- 1 dl (½ cup) cashew nuts
- 0.5 dl (3 tbsp) grated coconut
Instructions
- Rinse the millet thoroughly under running water until the water runs clear.
- In a saucepan, combine the millet, bananas, salt, and water. Cover with a lid and bring to a boil over low heat. Cook until the millet grains are fully tender and have opened.
- Transfer the hot mixture to a blender. Add the cashew nuts and grated coconut, then blend until completely smooth.
- Allow the pudding to cool before serving. Top with additional nuts, seeds, or berries if desired.
Tips & Variations
- Chill the pudding in the refrigerator after cooling to help it firm up.
- If the bananas are not very ripe, add a small amount of honey before blending for extra sweetness.
