Black Currant Spread

A rich, tangy fruit spread made from black currants, naturally sweetened with dates. Perfect as a topping for breakfast bowls, toast, pancakes, or waffles.

Yield: 7 dl (raw) or 1 liter (cooked) | Prep: 15–20 min | Cook: optional, 10–15 min | Total: 15–30 min

Ingredients

  • 5 dl (2 cups) black currants, fresh or frozen
  • 325 g (11.5 oz) date paste or fresh pitted dates
  • 3 dl (1¼ cups) water (for cooked version only)

Instructions

Option 1: Raw

  1. Cut the date paste or pitted dates into small pieces.
  2. Add all ingredients to a food processor.
  3. Blend until smooth and thick, with a consistency similar to ice cream.
  4. Yields about 7 dl of spread.

Option 2: Cooked

  1. Cut the date paste into small pieces.
  2. Combine the dates, black currants, and water in a saucepan.
  3. Cook over medium heat, stirring continuously, until the mixture becomes smooth and thick.
  4. Makes about 1 liter of spread.

Tips & Variations

  • Store in airtight jars. Refrigerate for up to one week, or freeze for longer storage.
