Bell Pepper Sausage

Bell Pepper Sausage

A smooth, flavorful, bell pepper–based sausage that’s easy to prepare and naturally gluten-free.

Yield: 600 ml (3 glasses, 14 slices each) | Prep: 5 min | Cook: 10 min | Cooling: 10+ min | Total: 25+ min

Ingredients

  • 100 g (3.5 oz) red bell pepper
  • 4 dl (1.7 cups) water
  • 1 dl (0.4 cup) almonds
  • 2 tsp salt
  • 1 tsp garlic powder
  • 2 tsp nutritional yeast
  • 2 tsp agar-agar powder

Instructions

  1. Chop the red bell pepper into small pieces.
  2. Blend all ingredients in a blender until smooth.
  3. Pour the mixture into a saucepan and bring it to a boil.
  4. Simmer for about 10 minutes, stirring constantly, until the the foam reduces to about half its original volume.
  5. Pour the mixture into 2.5 dl (1 cup) drinking glasses (or any similar cylindrical containers).
  6. Let it cool and set completely before removing.
  7. Once set, insert a thin knife at the edge to release the sausage.
  8. Slice and enjoy!

Tips & Variations

  • For square shapes, use a square container instead of a glass.
  • To speed up cooling, place the glasses in a bowl of very cold water for 5 minutes. Replace the water with fresh cold water and chill for another 5 minutes. Once the glasses feel cold to the touch, remove the sausage following the instructions above.
